Instructions:

Slice the chicken breasts lengthwise but till the end.

Open the breasts and flatten them to make as fine as possible.

Combine the chorizo, tomatoes, and parsley in a bowl.

Mix everything well and season.

Spread the mixture on to the chicken cutlets.

Roll the chicken as tight as possible and use wooden toothpick if needed.

Heat the olive oil into a large frying pan.

Cook and brown the chicken rolls on all sides.

Pour the white wine and season well.

Cook and simmer over low heat for 30 minutes.

Turn the chicken roll occasionally.
